Description

Ingredients

  • 200g pasta (your choice)
  • 250g ricotta cheese
  • 2 cups fresh spinach
  • 1 lemon (zested and juiced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving


Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add the spinach and sauté until wilted.
  3. Stir in the ricotta, lemon zest, and lemon juice. Mix well until combined.
  4. Add the cooked pasta to the pan and toss to coat evenly.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with grated Parmesan cheese.

Notes

For extra flavor, top with additional lemon zest and black pepper. Pairs well with a fresh salad or crusty bread.
