Ingredients
- 200g pasta (your choice)
- 250g ricotta cheese
- 2 cups fresh spinach
- 1 lemon (zested and juiced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the spinach and sauté until wilted.
- Stir in the ricotta, lemon zest, and lemon juice. Mix well until combined.
- Add the cooked pasta to the pan and toss to coat evenly.
- Season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese.
