Ingredients
- 2 cans whole kernel corn, drained
- 1 can Rotel (diced tomatoes and green chilies), drained
- 2 cups shredded cheddar cheese
- 6-8 green onions, sliced or chopped
- 1 cup sour cream (light or regular)
- 1 cup mayonnaise (light or regular)
- Fritos, tortilla chips, crackers, or veggies for dipping
Instructions
- In a large mixing bowl, combine all ingredients.
- Gently stir with a spatula or spoon until fully mixed.
- Transfer the dip to a serving bowl.
- Cover with plastic wrap or foil and refrigerate for at least 1 hour.
- Serve chilled with your favorite dippers.
- Store any leftovers in the refrigerator.
Notes
For more heat, consider adding diced jalapeños or hot sauce. For a lighter version, use Greek yogurt instead of sour cream and mayonnaise.
