A creamy and nostalgic dessert perfect for potlucks and summer gatherings.
Ingredients
- 1 tub whipped topping (thawed)
- 1 box instant strawberry gelatin
- 1 can crushed pineapple (about 20 oz, juice and all)
- 2 cups mini marshmallows
- 1 cup small curd cottage cheese
- 1 cup sliced fresh strawberries (optional)
Instructions
- In a large mixing bowl, combine the thawed whipped topping and instant strawberry gelatin.
- Add the can of crushed pineapple (with juice), and gently stir.
- Mix in the cottage cheese and mini marshmallows until well combined.
- Refrigerate for about an hour to allow the flavors to meld and the mixture to thicken.
- Before serving, add sliced fresh strawberries if desired.
Notes
Store in an airtight container in the fridge for up to two days. Do not freeze. Stir gently before serving if it settles.
