A fun and unique treat combining the freshness of watermelon with baked bread, making it a delightful snack or dessert.
Ingredients
- 1 1/2 cup watermelon chunks
- 1/2 cup (1 stick) butter, softened
- 2 eggs
- 3/4 cup sugar
- 2 cups flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup raisins (optional)
- 1 tsp red food coloring (optional)
Instructions
- Preheat the oven to 350°F and spray a 9×5-inch loaf pan.
- Blend the watermelon chunks until smooth to make 1 cup of puree.
- In a large bowl, mix the softened butter and sugar together. Then add the eggs and watermelon puree.
- Gradually add the flour, baking powder, and salt. Stir until well combined.
- If you like, fold in the raisins for added texture and sweetness.
- Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick comes out clean.
Notes
Store in an airtight container at room temperature for up to three days. Can be refrigerated or frozen for longer storage.
