A fun and unique treat combining the freshness of watermelon with baked bread, making it a delightful snack or dessert.


Ingredients

  • 1 1/2 cup watermelon chunks
  • 1/2 cup (1 stick) butter, softened
  • 2 eggs
  • 3/4 cup sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup raisins (optional)
  • 1 tsp red food coloring (optional)


Instructions

  1. Preheat the oven to 350°F and spray a 9×5-inch loaf pan.
  2. Blend the watermelon chunks until smooth to make 1 cup of puree.
  3. In a large bowl, mix the softened butter and sugar together. Then add the eggs and watermelon puree.
  4. Gradually add the flour, baking powder, and salt. Stir until well combined.
  5. If you like, fold in the raisins for added texture and sweetness.
  6. Pour the batter into the prepared loaf pan and bake for 1 hour, or until a toothpick comes out clean.

Notes

Store in an airtight container at room temperature for up to three days. Can be refrigerated or frozen for longer storage.
