A delightful dish combining tender chicken, fluffy pearl couscous, and colorful vegetables, perfect for a satisfying meal.
Ingredients
- 2 cups pearl couscous
- 1 lb chicken breast, diced
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon paprika
- Fresh herbs (parsley or cilantro) for garnish
Instructions
- In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
- Add chicken and cook until it’s no longer pink.
- Stir in the bell pepper, salt, pepper, and paprika.
- Pour in the chicken broth and bring to a simmer.
- Add the pearl couscous, cover, and cook for 10-12 minutes until couscous is tender.
- Serve warm, garnished with freshly chopped herbs.
Notes
Can be made vegetarian by using chickpeas or tofu and vegetable broth instead of chicken broth. Adjust seasoning to taste.
