Description

A delightful dish combining tender chicken, fluffy pearl couscous, and colorful vegetables, perfect for a satisfying meal.


Ingredients

  • 2 cups pearl couscous
  • 1 lb chicken breast, diced
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • Fresh herbs (parsley or cilantro) for garnish


Instructions

  1. In a pot, heat olive oil over medium heat. Add onion and garlic, sauté until translucent.
  2. Add chicken and cook until it’s no longer pink.
  3. Stir in the bell pepper, salt, pepper, and paprika.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the pearl couscous, cover, and cook for 10-12 minutes until couscous is tender.
  6. Serve warm, garnished with freshly chopped herbs.

Notes

Can be made vegetarian by using chickpeas or tofu and vegetable broth instead of chicken broth. Adjust seasoning to taste.
