A colorful and healthy Turkey Veggie Tray that adds a festive touch to your Thanksgiving feast, encouraging everyone to munch on fresh vegetables while celebrating.
Ingredients
- Rainbow carrots (peeled and halved lengthwise)
- Mini sweet peppers (halved lengthwise, plus a waddle cut-out)
- Snap peas (halved crosswise)
- Purple cauliflower (cut into florets)
- Radishes (thinly sliced)
- Veggie dip (such as Heluva Good! French Onion Dip or hummus)
- Cheddar cheese beak cut-out
- Savory thin crackers or crackers of your choice (optional)
- Edible eyes
Instructions
- Start by working from the top of a large serving board.
- Fan the rainbow carrots around the outer edge, alternating colors for a vibrant look.
- Add a layer of mini sweet peppers and snap peas, overlapping the carrots as you go.
- Next, place a layer of purple cauliflower florets on the board.
- Follow with another row of mini sweet peppers to maintain the colorful design.
- Place a small bowl of your chosen dip in the center of the board in front of the peppers.
- Insert a row of snap peas into the back of the dip, creating the turkey’s body.
- Add a row of alternating mini sweet peppers in front of the dip.
- Use edible eyes, a cheddar cheese beak, and the pepper waddle on top of the dip to create the turkey’s face.
- Finally, place sliced radishes on the sides under the veggie feathers and fill in the space in front of the bowl with chips. Add pretzel legs in front to finish the turkey look.
Notes
Store leftovers in separate airtight containers; best eaten within 2-3 days. Consider involving kids in decorating for a fun family activity!
