A delicious and easy recipe that combines the richness of salmon with tropical flavors of honey and soy sauce, featuring grilled pineapple.
Ingredients
- 2 salmon fillets
- 1 cup fresh pineapple, diced
- 1/4 cup honey
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon ginger, grated
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- In a bowl, mix honey, soy sauce, olive oil, minced garlic, and grated ginger. Stir well until combined.
- Place the salmon fillets in a shallow dish and pour half of the marinade over them. Let it marinate in the refrigerator for at least 30 minutes.
- Preheat your grill or a grill pan over medium heat.
- Toss the diced pineapple with a bit of olive oil and grill for about 2-3 minutes on each side until caramelized. Remove and set aside.
- Take the salmon out of the marinade and season with salt and pepper. Grill for about 5-6 minutes on each side, or until the salmon flakes easily with a fork.
- Plate the salmon and top with grilled pineapple. Drizzle with the remaining marinade and garnish with fresh cilantro or parsley. Enjoy!
Notes
Make sure not to overcook the salmon; it should be flakey but still moist. You can add a squeeze of lime for an extra zing just before serving.
