Quick and easy butterscotch bars that are chewy, nutty, and bursting with nostalgia. Perfect for satisfying your sweet tooth in no time!


Ingredients

  • 1 cup butterscotch chips
  • 1/2 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped pecans or walnuts


Instructions

  1. Melt butterscotch chips and butter together in a microwave, using low power to avoid lumps.
  2. Beat in the brown sugar until combined.
  3. Let the mixture cool slightly, then mix in the eggs and vanilla extract until shiny.
  4. Add the flour, baking powder, and salt, folding in optional nuts or chocolate chips if desired.
  5. Grease a baking pan and pour the mixture in, smoothing it out with a spatula.
  6. Bake at 350°F for about 25 minutes, until slightly jiggly in the middle.
  7. Allow to cool before cutting into bars.

Notes

These bars can be personalized with nuts or chocolate chips. Store in an airtight container for 2-3 days or freeze for longer storage.
