Description

Ingredients

  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 1 cup sliced mushrooms
  • 4 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sliced jalapeños (optional)
  • 1/2 cup cooked bacon bits (optional)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat.
  3. Season the chicken breasts with salt and pepper.
  4. Sauté the chicken in the skillet until golden brown on both sides, about 5-7 minutes per side.
  5. Remove chicken from the skillet and set aside.
  6. Add sliced mushrooms to the same skillet and sauté until tender.
  7. Place the chicken in a baking dish and top with sautéed mushrooms, shredded Monterey Jack cheese, jalapeños, and bacon bits.
  8. Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the cheese is melted.
