Ingredients
- 2 tbsp olive oil
- Salt & pepper to taste
- 1 cup sliced mushrooms
- 4 boneless, skinless chicken breasts
- 1 cup shredded Monterey Jack cheese
- 1 cup sliced jalapeños (optional)
- 1/2 cup cooked bacon bits (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat.
- Season the chicken breasts with salt and pepper.
- Sauté the chicken in the skillet until golden brown on both sides, about 5-7 minutes per side.
- Remove chicken from the skillet and set aside.
- Add sliced mushrooms to the same skillet and sauté until tender.
- Place the chicken in a baking dish and top with sautéed mushrooms, shredded Monterey Jack cheese, jalapeños, and bacon bits.
- Bake in the preheated oven for about 20-25 minutes or until the chicken is cooked through and the cheese is melted.
- Serve hot and enjoy!
