Description

A delightful and quick meal combining tender beef, sweet pineapple, and savory sauce over fluffy rice, perfect for busy weeknights.


Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 cup uncooked long grain rice
  • 1 cup pineapple chunks, fresh or canned
  • 1/2 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon sesame oil
  • 1 green onion, thinly sliced for garnish
  • Sesame seeds for garnish


Instructions

  1. Cook rice according to package directions.
  2. In a small bowl, whisk together teriyaki sauce, soy sauce, brown sugar, and cornstarch until smooth.
  3. Heat sesame oil in a large skillet or wok over medium-high heat.
  4. Add beef and stir fry until browned, about 3-5 minutes.
  5. Pour teriyaki sauce mixture over beef and bring to a simmer.
  6. Cook until sauce has thickened and beef is cooked through, about 2-3 minutes.
  7. Stir in pineapple chunks and heat through.
  8. Serve beef and pineapple mixture over cooked rice.
  9. Garnish with sliced green onions and sesame seeds.

Notes

Slice beef thinly for quick cooking. Use fresh pineapple for more flavor, but canned works too. Adjust sweetness with brown sugar.
