A delightful and quick meal combining tender beef, sweet pineapple, and savory sauce over fluffy rice, perfect for busy weeknights.
Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 cup uncooked long grain rice
- 1 cup pineapple chunks, fresh or canned
- 1/2 cup teriyaki sauce
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon sesame oil
- 1 green onion, thinly sliced for garnish
- Sesame seeds for garnish
Instructions
- Cook rice according to package directions.
- In a small bowl, whisk together teriyaki sauce, soy sauce, brown sugar, and cornstarch until smooth.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add beef and stir fry until browned, about 3-5 minutes.
- Pour teriyaki sauce mixture over beef and bring to a simmer.
- Cook until sauce has thickened and beef is cooked through, about 2-3 minutes.
- Stir in pineapple chunks and heat through.
- Serve beef and pineapple mixture over cooked rice.
- Garnish with sliced green onions and sesame seeds.
Notes
Slice beef thinly for quick cooking. Use fresh pineapple for more flavor, but canned works too. Adjust sweetness with brown sugar.
