Description

Delightful mini cupcakes topped with gooey caramelized pineapple and a cherry, perfect for any sweet craving.


Ingredients

  • 1/4 cup unsalted butter, melted
  • 1/2 cup light brown sugar
  • 1 can of pineapple rings
  • 1/4 cup maraschino cherries
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract (optional)
  • 1/2 teaspoon ground cinnamon (optional)


Instructions

  1. Melt the butter and mix it with brown sugar; spoon a small amount into each cupcake cup.
  2. Press a pineapple slice into the sugar mixture and place a maraschino cherry in the center.
  3. Pour the cake batter over the pineapple and cherry, being careful not to overfill.
  4. Bake until puffy and golden brown.
  5. Let cool for 5 minutes before flipping them out onto a rack.
  6. Enjoy warm or chilled.

Notes

Use cupcake liners for easy removal, and consider using blueberries or mangoes for a tropical twist. Leftovers can be refrigerated or warmed in the microwave.
