Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup chopped walnuts or almonds
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup grated apple
- 1 cup grated carrot
- 1 ripe banana, mashed
- 1 egg
- 1 tsp vanilla extract
- 1/2 cup unsweetened almond milk
- 1 tbsp chia seeds (optional)
- 1 scoop unflavored protein powder (optional)
- 2 tbsp unsweetened coconut flakes (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, combine the rolled oats, chopped nuts, cinnamon, nutmeg, and salt.
- In another bowl, mix the grated apple, grated carrot, mashed banana, egg, vanilla extract, and almond milk until well combined.
- Pour the wet mix into the dry base and stir until everything is well incorporated.
- If using, add chia seeds, protein powder, and coconut flakes and mix again.
- Pour the mixture into the greased baking dish and spread it evenly.
- Bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow to cool slightly before cutting into squares and serving.
Notes
For extra flavor, consider adding a dash of vanilla or almond extract. Use a mix of apples and carrots for a more diverse taste.
