Start your day on a healthy note with this delicious, sugar-free breakfast bake packed with nutritious ingredients.


Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup chopped walnuts or almonds
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1 cup grated apple
  • 1 cup grated carrot
  • 1 ripe banana, mashed
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1 tbsp chia seeds (optional)
  • 1 scoop unflavored protein powder (optional)
  • 2 tbsp unsweetened coconut flakes (optional)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a large bowl, combine the rolled oats, chopped nuts, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the grated apple, grated carrot, mashed banana, egg, vanilla extract, and almond milk until well combined.
  4. Pour the wet mix into the dry base and stir until everything is well incorporated.
  5. If using, add chia seeds, protein powder, and coconut flakes and mix again.
  6. Pour the mixture into the greased baking dish and spread it evenly.
  7. Bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
  8. Allow to cool slightly before cutting into squares and serving.

Notes

For extra flavor, consider adding a dash of vanilla or almond extract. Use a mix of apples and carrots for a more diverse taste.
