Ingredients
- 1 cup cornmeal
- 1 cup buttermilk
- 2 eggs
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup shredded cheese (Monterey Jack or Cheddar)
- 1 cup diced roasted green chiles
- 1/2 teaspoon salt
- 1/4 cup chopped onion (optional)
- 1/4 cup vegetable oil
Instructions
- Preheat your oven to 400°F (200°C). Grease a baking dish or skillet.
- In a large bowl, mix the cornmeal, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, eggs, and oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fold in the cheese, chiles, and onion if using.
- Pour the batter into the prepared baking dish.
- Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.

Notes
For extra flavor, use a mix of different cheeses. If you like it spicy, add more chiles or include diced jalapeños.
