Description

Ingredients

  • 1 cup cornmeal
  • 1 cup buttermilk
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 cup shredded cheese (Monterey Jack or Cheddar)
  • 1 cup diced roasted green chiles
  • 1/2 teaspoon salt
  • 1/4 cup chopped onion (optional)
  • 1/4 cup vegetable oil


Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish or skillet.
  2. In a large bowl, mix the cornmeal, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the buttermilk, eggs, and oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fold in the cheese, chiles, and onion if using.
  6. Pour the batter into the prepared baking dish.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.

Notes
