Ingredients
- 1 pound ground beef
- 1 onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 1 cup cooked white rice
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F and grease a 9×13 inch baking dish.
- In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion, green bell pepper, and red bell pepper to the skillet. Cook until vegetables are tender.
- Stir in the diced tomatoes, cooked rice, garlic powder, salt, and pepper. Cook for an additional 5 minutes.
- Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
Notes
Feel free to use ground turkey or chicken instead of beef for a lighter option. For added flavor, mix in spices like cumin or paprika. You can also customize with other vegetables such as corn or black beans.
