Description

A comforting and hearty casserole that combines the flavors of traditional stuffed peppers, perfect for busy weeknights or family dinners.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup cooked white rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F and grease a 9×13 inch baking dish.
  2. In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the diced onion, green bell pepper, and red bell pepper to the skillet. Cook until vegetables are tender.
  4. Stir in the diced tomatoes, cooked rice, garlic powder, salt, and pepper. Cook for an additional 5 minutes.
  5. Transfer the mixture to the prepared baking dish and top with shredded cheddar cheese.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly.

Notes

Feel free to use ground turkey or chicken instead of beef for a lighter option. For added flavor, mix in spices like cumin or paprika. You can also customize with other vegetables such as corn or black beans.
