Description
A refreshing and tropical Strawberry Piña Colada Punch that’s perfect for sunny days and gatherings.
Ingredients
- 4 cups diced pineapple (fresh or canned, drained)
- 2 cups sliced strawberries
- 2 tablespoons frozen orange juice concentrate
- 1 1/2 cups cream of coconut (chilled)
- 1 1/2 cups coconut rum (chilled)
- 1 cup pineapple juice
- 2-3 cups crushed ice
- 1 1/2 cups coconut water or coconut milk (for mocktail version)
- Optional: a splash of vanilla extract
Instructions
- In a high-powered blender, combine the pineapple, strawberries, orange juice concentrate, cream of coconut, coconut rum (or coconut water), pineapple juice, and crushed ice. Blend until smooth and creamy.
- Pour the blended mixture into a large pitcher or punch bowl. Place in the fridge for at least 30 minutes to chill and let the flavors come together.
- Stir the punch before serving, then pour over fresh ice into glasses. Garnish with pineapple wedges, strawberry slices, or cocktail umbrellas.
Notes
For a thicker texture, use frozen strawberries and pineapple. Chill your coconut rum and cream of coconut before blending to keep the punch cool. You can make it ahead of time by blending without ice and refrigerating. Add ice before serving.
