Description

Delicious cookies filled with creamy strawberry cheesecake goodness, perfect for any gathering or a cozy snack.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract
  • 1/4 cup strawberry jam or preserves


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the egg and vanilla extract until well mixed.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture until combined.
  5. In a separate bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth to make the filling.
  6. Take a scoop of the cookie dough, flatten it out, and place a small spoonful of the cheesecake filling in the center. Top it with a swirl of strawberry jam.
  7. Encase the filling with the dough, roll it into a ball, and place it on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until golden.
  9. Allow to cool before serving.
