Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 6 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1/4 teaspoon vanilla extract
- 1/4 cup strawberry jam or preserves
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the egg and vanilla extract until well mixed.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet mixture until combined.
- In a separate bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth to make the filling.
- Take a scoop of the cookie dough, flatten it out, and place a small spoonful of the cheesecake filling in the center. Top it with a swirl of strawberry jam.
- Encase the filling with the dough, roll it into a ball, and place it on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until golden.
- Allow to cool before serving.
