Description

A delightful and creamy dish that combines Arborio rice, fresh spinach, and mushrooms for a comforting meal.


Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1 cup fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. In a saucepan, heat the vegetable broth and keep it warm.
  2. In a separate large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the sliced mushrooms and cook until they soften.
  4. Stir in the Arborio rice, allowing it to toast for 1-2 minutes.
  5. Begin adding the warm vegetable broth one ladle at a time, stirring frequently and allowing the liquid to absorb before adding more.
  6. When the rice is creamy and al dente, stir in the chopped spinach.
  7. Remove from heat and mix in the grated Parmesan cheese.
  8. Season with salt and pepper to taste. Serve warm.

Notes

For added creaminess, consider stirring in extra cheese before serving. Pair with a light salad or crusty bread.
