Description

Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 10 ounces mushrooms, sliced
  • 10 ounces fresh spinach leaves
  • 2 cups ricotta cheese
  • Lasagna noodles


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the chopped onion and minced garlic, cooking until softened.
  4. Add the sliced mushrooms and cook until they are browned.
  5. Stir in the spinach and let it wilt down.
  6. In a bowl, mix the cooked vegetables with the ricotta cheese.
  7. Layer the vegetable and ricotta mixture with the lasagna noodles in a baking dish.
  8. Bake in the oven for 30 to 40 minutes, or until the top is golden and bubbling.
  9. Let it cool slightly before serving.

Notes

Add grated Parmesan cheese to the ricotta mixture for extra flavor. Use no-boil lasagna noodles to save time.
