A fresh and nutritious salad featuring spinach, chickpeas, and creamy avocado with a zesty garlic lime vinaigrette.
Ingredients
- 5 ounces baby spinach
- 1 (15-ounce) can chickpeas, rinsed and drained
- 2 ripe avocados, pitted and diced
- 1/2 red onion, thinly sliced
- 1/4 cup chopped fresh cilantro
- 1/4 cup crumbled feta cheese (optional)
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon water
- 1 clove garlic, minced
- 1/2 teaspoon honey
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- In a small bowl, whisk together the olive oil, lime juice, water, minced garlic, honey, salt, and pepper until well combined to prepare the vinaigrette.
- In a large bowl, mix the baby spinach, rinsed chickpeas, diced avocados, thinly sliced red onion, and chopped cilantro.
- Drizzle the garlic lime vinaigrette over the salad and gently toss to coat all the ingredients evenly. If desired, sprinkle feta cheese over the top.
- Serve the salad immediately, or chill briefly before serving to enhance flavors.
Notes
