Ingredients
- 2 halal chicken breasts, diced
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp tomato paste
- 1 tbsp honey
- 1 tsp chili flakes (more or less to taste)
- 1 tbsp lemon juice
- Salt & pepper to taste
- 1 cup classic hummus (store-bought or homemade, halal-certified)
- 1 cup cucumber, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1 tbsp fresh parsley or dill, chopped
- Juice of 1/2 lemon
- 1 tbsp olive oil
- Salt & black pepper to taste
- 2 cups cooked rice or quinoa (or greens for low-carb)
- Optional: extra lemon wedges, chili sauce, or fresh herbs
Instructions
- Toss the diced chicken with olive oil, minced garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper in a bowl.
- Heat a skillet over medium-high heat. Add the chicken and sauté for 6-8 minutes, stirring often until the chicken is golden brown, cooked through, and caramelized.
- In another bowl, mix diced cucumber, halved cherry tomatoes, finely chopped red onion, chopped herbs, lemon juice, olive oil, salt, and pepper. Let this sit for a few minutes to enhance the flavors.
- To assemble the bowls, add a scoop of rice (or greens) to each bowl. Top with a generous spoonful of hummus, the spicy chicken, and a big handful of cucumber salad.
- Finish with extra lemon wedges and a drizzle of your favorite chili sauce if desired.
Notes
For added flavor, marinate the chicken for a few hours before cooking. This recipe is gluten-free if you use gluten-free grains like quinoa.
