Spicy Garlic Chicken Bowl with Hummus & Cucumber Salad

Description

A delicious and vibrant meal featuring spicy garlic chicken, creamy hummus, and fresh cucumber salad. Quick to prepare and highly customizable.


Ingredients

  • 2 halal chicken breasts, diced
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tbsp tomato paste
  • 1 tbsp honey
  • 1 tsp chili flakes (more or less to taste)
  • 1 tbsp lemon juice
  • Salt & pepper to taste
  • 1 cup classic hummus (store-bought or homemade, halal-certified)
  • 1 cup cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1 tbsp fresh parsley or dill, chopped
  • Juice of 1/2 lemon
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • 2 cups cooked rice or quinoa (or greens for low-carb)
  • Optional: extra lemon wedges, chili sauce, or fresh herbs


Instructions

  1. Toss the diced chicken with olive oil, minced garlic, tomato paste, honey, chili flakes, lemon juice, salt, and pepper in a bowl.
  2. Heat a skillet over medium-high heat. Add the chicken and sauté for 6-8 minutes, stirring often until the chicken is golden brown, cooked through, and caramelized.
  3. In another bowl, mix diced cucumber, halved cherry tomatoes, finely chopped red onion, chopped herbs, lemon juice, olive oil, salt, and pepper. Let this sit for a few minutes to enhance the flavors.
  4. To assemble the bowls, add a scoop of rice (or greens) to each bowl. Top with a generous spoonful of hummus, the spicy chicken, and a big handful of cucumber salad.
  5. Finish with extra lemon wedges and a drizzle of your favorite chili sauce if desired.

Notes

For added flavor, marinate the chicken for a few hours before cooking. This recipe is gluten-free if you use gluten-free grains like quinoa.
