A delightful dessert featuring the natural sweetness of sweet potatoes and a buttery cobbler-like texture, perfect for any gathering.


Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup water


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, milk, melted butter, eggs, and vanilla extract. Mix until smooth.
  3. Add the cinnamon, nutmeg, and salt to the sweet potato mixture, stirring well to combine.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually add this to the sweet potato mixture, mixing until just combined.
  5. Pour the batter into the prepared baking dish, spreading it evenly.
  6. Carefully pour the water over the top of the batter. Do not stir; this will create a lovely cobbler texture as it bakes.
  7. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  8. Let it cool for a few minutes before serving. Enjoy warm, perhaps with a scoop of vanilla ice cream on top!

Notes

Make sure to mash your sweet potatoes well for a smooth texture. Don’t skip pouring the water on top before baking for the perfect cobbler texture.
