Ingredients
- 2 cups mashed sweet potatoes
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup milk
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1 cup water
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, milk, melted butter, eggs, and vanilla extract. Mix until smooth.
- Add the cinnamon, nutmeg, and salt to the sweet potato mixture, stirring well to combine.
- In a separate bowl, whisk together the flour and baking powder. Gradually add this to the sweet potato mixture, mixing until just combined.
- Pour the batter into the prepared baking dish, spreading it evenly.
- Carefully pour the water over the top of the batter. Do not stir; this will create a lovely cobbler texture as it bakes.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Let it cool for a few minutes before serving. Enjoy warm, perhaps with a scoop of vanilla ice cream on top!
Notes
Make sure to mash your sweet potatoes well for a smooth texture. Don’t skip pouring the water on top before baking for the perfect cobbler texture.
