Delightful soft cut-out sugar cookies perfect for any occasion, easily customizable for decoration.
Ingredients
- 2 and 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 2 teaspoons pure vanilla extract
- 1/4 teaspoon almond extract (optional)
- Royal Icing or Easy Glaze Icing
- Assorted sprinkles
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.
- In a large bowl, beat the softened butter and sugar on high speed until the mixture is light and creamy, about 3 minutes. Add the egg, vanilla, and almond extract (if using), and mix until well combined.
- Mix in the dry ingredients on low speed until the dough comes together. Adjust with more flour if the dough is too sticky.
- Divide the dough in half. Roll each portion to about 1/4-inch thickness on a floured piece of parchment paper. Refrigerate the dough for at least 2 hours.
- Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
- Cut the chilled dough into shapes using cookie cutters. Reroll scraps as needed. Place the cookies on prepared sheets, leaving about 3 inches between each one.
- Bake for 11 to 12 minutes, or until the edges are lightly browned. Let cool on baking sheets for 5 minutes, then transfer to a cooling rack.
- Once cool, decorate with icing and sprinkles. Allow icing to set before serving.
- Store leftovers in a covered container at room temperature or refrigerate for longer storage.
