Description

Soft and chewy Snickerdoodle Cookie Bars spiced with cinnamon and sugar, perfect for gatherings or a sweet treat at home.


Ingredients

  • 1 cup (2 sticks / 227g) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs, at room temperature
  • 2 tsp pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp fine sea salt
  • For the Cinnamon-Sugar Topping:
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan lined with parchment paper.
  2. In a small bowl, combine 1/2 cup sugar and cinnamon for the topping.
  3. In a large bowl, cream together the softened butter and 1 1/2 cups sugar until light and fluffy.
  4. Beat in the eggs one at a time, then add vanilla extract.
  5. Mix in the flour, baking powder, and salt until just combined.
  6. Spread the batter evenly in the prepared pan and sprinkle the cinnamon-sugar topping over the top.
  7. Bake for 25–28 minutes or until a toothpick comes out clean.
  8. Cool completely before lifting out of the pan and slicing into bars.

Notes

For an added touch, dust with extra cinnamon-sugar before serving. These bars can be served warm with vanilla ice cream.
