Description
Soft and chewy Snickerdoodle Cookie Bars spiced with cinnamon and sugar, perfect for gatherings or a sweet treat at home.
Ingredients
- 1 cup (2 sticks / 227g) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs, at room temperature
- 2 tsp pure vanilla extract
- 2 1/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp fine sea salt
- For the Cinnamon-Sugar Topping:
- 1/2 cup granulated sugar
- 2 tsp ground cinnamon
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan lined with parchment paper.
- In a small bowl, combine 1/2 cup sugar and cinnamon for the topping.
- In a large bowl, cream together the softened butter and 1 1/2 cups sugar until light and fluffy.
- Beat in the eggs one at a time, then add vanilla extract.
- Mix in the flour, baking powder, and salt until just combined.
- Spread the batter evenly in the prepared pan and sprinkle the cinnamon-sugar topping over the top.
- Bake for 25–28 minutes or until a toothpick comes out clean.
- Cool completely before lifting out of the pan and slicing into bars.
Notes
For an added touch, dust with extra cinnamon-sugar before serving. These bars can be served warm with vanilla ice cream.
