Smoky Bourbon BBQ Bacon-Wrapped Meatloaf Cupcakes with Mashed Potato Frosting

Description

A fun twist on classic meatloaf, these bite-sized meatloaf cupcakes are wrapped in bacon and topped with creamy mashed potato frosting.


Ingredients

  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1/2 cup breadcrumbs
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tbsp smoky bourbon BBQ sauce
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 slices of bacon
  • 2 cups mashed potatoes


Instructions

  1. Preheat your oven to 375°F. Spray a muffin tin with non-stick cooking spray.
  2. In a large bowl, mix together the ground beef, breadcrumbs, ketchup, Worcestershire sauce, 1/2 tablespoon of BBQ sauce, garlic powder, salt, and black pepper.
  3. Divide the meat mixture among the 8 muffin cups, pressing it firmly down and creating a small depression in the center of each.
  4. Brush the remaining BBQ sauce over the top of each meat cup.
  5. Wrap each meat cup with a slice of bacon, tucking the ends underneath.
  6. Bake in the preheated oven for 25-30 minutes until the internal temperature reaches 165°F and the bacon is crispy.
  7. While the cupcakes are baking, prepare the mashed potatoes and place them in a piping bag with a star tip.
  8. Let the cupcakes rest for 5 minutes before removing them from the tin.
  9. Pipe the mashed potatoes on top in a swirl pattern to mimic frosting. Garnish with chopped herbs and serve warm.

Notes

Great for dinner parties or family meals. Can be served as a standalone main dish or with sides.
