Ingredients

  • 8 ounces of your preferred pasta
  • 2 cups broccoli florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the broccoli florets with olive oil, salt, and pepper, then spread them on a baking sheet and roast for 15-20 minutes until tender.
  3. Meanwhile, cook the pasta according to package instructions and drain.
  4. In a large skillet, combine the cooked pasta, roasted broccoli, spinach, ricotta cheese, Parmesan cheese, garlic powder, and red pepper flakes.
  5. Cook over medium heat until the spinach wilts and everything is heated through.
  6. Serve with fresh basil on top.
