Description

Transform plain roasted carrots into a fancy dish with creamy whipped ricotta and a drizzle of hot honey for a sweet and spicy twist.


Ingredients

  • 1 pound carrots
  • 1 cup ricotta cheese
  • 3 tablespoons hot honey (honey mixed with chili flakes)
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Fresh herbs (optional, e.g., dill or parsley)


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the carrots in half lengthwise if they are thick and place them on a baking tray.
  3. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat.
  4. Roast the carrots for about 25 minutes, until browned and crispy at the edges.
  5. While the carrots roast, add the ricotta to a bowl. Drizzle with olive oil and a pinch of salt, then whip with a fork until smooth.
  6. Mix the honey and chili flakes together to create the hot honey.
  7. Once the carrots are done, place some whipped ricotta on a plate, top with roasted carrots, and drizzle with hot honey.

Notes

Feel free to adjust the heat level by varying the amount of chili flakes in the honey. You can also swap out ricotta for goat cheese or cream cheese if desired.
