A delightful dish featuring tender chicken breasts stuffed with creamy cheese and flavorful mushrooms, perfect for any occasion.
Ingredients
- 2 chicken breasts
- 100g fresh mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Add the minced garlic and chopped mushrooms, cooking until the mushrooms are soft.
- In a bowl, combine the cooked mushroom mixture with cream cheese and mozzarella cheese. Season with salt and pepper.
- Cut a pocket in each chicken breast and stuff with the cheese and mushroom mixture.
- Heat the skillet again over medium-high heat and sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken to a baking dish, pour the chicken broth over, and bake in the preheated oven for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- Garnish with fresh thyme before serving.
Notes
Make sure to finely chop the mushrooms so they fit well in the chicken pockets. You can use any type of cheese you like.
