Ingredients
- 2 chicken breasts
- 100g fresh mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup shredded mozzarella cheese
- 2 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- Salt and pepper, to taste
- Fresh thyme, for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, melt butter over medium heat. Add garlic and chopped mushrooms. Sauté until the mushrooms are tender.
- In a bowl, mix together the cream cheese, mozzarella cheese, and sautéed mushrooms. Season with salt and pepper to taste.
- Cut a pocket in each chicken breast and fill it with the cheese and mushroom mixture.
- Place the stuffed chicken in a baking dish and pour the chicken broth over the top.
- Bake for 25-30 minutes or until the chicken is cooked through.
- Garnish with fresh thyme before serving.
Notes
Ensure chicken breasts are even in thickness for even cooking. Experiment with different cheeses or add spinach for variation.
