Description
A satisfying dish bringing together smoky sausage, sweet bell peppers, and savory onions over fluffy rice for a wholesome dinner.
Ingredients
- 1 lb smoked sausage, sliced into 1⁄4-inch rounds
- 1 large green bell pepper, sliced
- 1 medium yellow bell pepper, sliced (optional)
- 1 large yellow onion, sliced
- 2 tablespoons olive oil or butter
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1⁄2 teaspoon salt (or to taste)
- 1 teaspoon Cajun seasoning (optional)
- 2 cups cooked white rice (for serving)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add sausage slices in a single layer. Cook for 4–5 minutes per side until browned. Remove and set aside.
- In the same skillet, add sliced onions and bell peppers. Sauté for 6–8 minutes until softened and slightly charred.
- Return the sausage to the skillet. Sprinkle in garlic powder, black pepper, salt, and Cajun seasoning. Stir well to coat.
- Cook everything together for 2–3 more minutes to blend flavors.
- Serve hot over cooked white rice. Enjoy!
Notes
Great to serve hot on its own or with salad/crusty bread. Consider pairing with hot sauce for heat.
