Description
A creamy cheesecake inspired by the beloved Girl Scout Samoa cookie, featuring chocolate, caramel, and coconut flavors.
Ingredients
- 2 1/2 cups chocolate sandwich cookie crumbs (from 26 original OREO cookies, finely ground)
- 6 tablespoons unsalted butter, melted and cooled
- 1/2 teaspoon salt
- 32 ounces cream cheese, softened to room temperature
- 1 1/2 cups granulated sugar
- 1 tablespoon vanilla extract
- 4 large eggs, room temperature
- 1/2 cup sour cream
- 3 tablespoons heavy cream
- 4 to 6 cups boiling water (for the water bath)
- 2 1/4 cups sweetened shredded coconut
- 1 cup salted caramel sauce (plus more for garnish)
- Chocolate dessert sauce (for garnish)
- Caramel dessert sauce (for garnish)
- Whipped topping and Samoa or Coconut Dream Cookies for garnish
Instructions
- Preheat the oven to 325°F (160°C) and prepare a 9-inch springform pan.
- In a bowl, combine the chocolate cookie crumbs, melted butter, and salt until well mixed. Press this mixture into the bottom of the springform pan to form the crust.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and vanilla extract, mixing until blended.
- Add the eggs one at a time, mixing on low speed after each addition. Then add the sour cream and heavy cream, mixing until smooth.
- Pour the cheesecake batter over the crust in the springform pan.
- Place the springform pan inside a larger roasting pan and fill the roasting pan with boiling water, making sure it reaches halfway up the sides of the springform pan.
- Bake the cheesecake for 60-70 minutes, or until the center is set but slightly wobbly.
- Turn off the oven and leave the cheesecake inside for 1 hour. Then remove it and let it cool to room temperature.
- Refrigerate the cheesecake for at least 4 hours or overnight.
- For the topping, toast the shredded coconut in a skillet over medium heat until golden and fragrant.
- Once the cheesecake is chilled, spread a generous layer of salted caramel sauce over the top, sprinkle with toasted coconut, and drizzle chocolate and additional caramel sauce over the topping.
- Garnish with whipped topping and Samoas or Coconut Dream Cookies before serving.
Notes
Ensure the cream cheese is at room temperature for a smooth batter and don’t skip the water bath to prevent cracking.
