Description
A delightful toast featuring roasted strawberries and creamy whipped ricotta, perfect for breakfast or a quick snack.
Ingredients
- 1 pint fresh strawberries, hulled and halved
- 1 tablespoon granulated sugar
- 1 teaspoon balsamic vinegar
- 1 tablespoon olive oil
- 1 cup whole milk ricotta cheese
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 4 slices rustic bread
- 1 tablespoon unsalted butter
- Fresh mint leaves or basil (optional)
- A drizzle of honey or balsamic glaze (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a baking sheet, toss the strawberries with sugar, balsamic vinegar, and olive oil.
- Roast the strawberries for about 15-20 minutes, stirring halfway through.
- While the strawberries are roasting, mix together the ricotta cheese, honey, vanilla extract, and a pinch of salt with a hand mixer until smooth and creamy.
- Toast the bread until it’s golden and crisp.
- Spread the whipped ricotta on each slice of toast, then top with the roasted strawberries. Add any optional toppings if desired.
Notes
Best enjoyed fresh, but leftovers can be stored for up to two days. Serve warm with optional fresh herbs or drizzles.
