Description
Delicious bite-sized treats combining creamy peanut butter cups with soft chocolate chip cookies.
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 1 teaspoon sea salt
- 1 teaspoon baking soda
- 2 1/2 cups all-purpose flour
- 2 cups semi-sweet chocolate chips
- 1 1/2 to 2 packages mini Reese’s Peanut Butter Cups, unwrapped
Instructions
- Preheat your oven to 350 degrees F. Lightly grease a mini muffin tin.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the pure vanilla extract.
- Add sea salt, baking soda, and flour all at once. Mix on low speed until well combined.
- Fold in the semi-sweet chocolate chips gently.
- Use a tablespoon or a small cookie scoop to fill each muffin cup about 2/3 full with the cookie dough.
- Bake for 8 to 9 minutes, or until the tops are set and no longer glossy.
- Remove from the oven and immediately press one mini Reese’s Peanut Butter Cup into the center of each cookie.
- Let cool in the pan for about 5 minutes before removing.
Notes
These cookie bites are best served warm, right after cooling. Store them in an airtight container at room temperature for up to a week or freeze for up to a month.
