Reese’s Peanut Butter Chocolate Chip Cookie Bites

Description

Delicious bite-sized treats combining creamy peanut butter cups with soft chocolate chip cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon sea salt
  • 1 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 2 cups semi-sweet chocolate chips
  • 1 1/2 to 2 packages mini Reese’s Peanut Butter Cups, unwrapped


Instructions

  1. Preheat your oven to 350 degrees F. Lightly grease a mini muffin tin.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until smooth and creamy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the pure vanilla extract.
  5. Add sea salt, baking soda, and flour all at once. Mix on low speed until well combined.
  6. Fold in the semi-sweet chocolate chips gently.
  7. Use a tablespoon or a small cookie scoop to fill each muffin cup about 2/3 full with the cookie dough.
  8. Bake for 8 to 9 minutes, or until the tops are set and no longer glossy.
  9. Remove from the oven and immediately press one mini Reese’s Peanut Butter Cup into the center of each cookie.
  10. Let cool in the pan for about 5 minutes before removing.

Notes

These cookie bites are best served warm, right after cooling. Store them in an airtight container at room temperature for up to a week or freeze for up to a month.
