Description

A delightful dish combining soft ravioli with fresh vegetables, perfect for a quick weeknight dinner.


Ingredients

  • 1 package of ravioli
  • 2 cups cherry tomatoes, halved
  • 1 cup asparagus, trimmed and cut into pieces
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt & pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves (for garnish)


Instructions

  1. Cook the ravioli according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the garlic and sauté for 1 minute until fragrant.
  4. Add the cherry tomatoes and asparagus, season with salt and pepper, and cook for about 5-7 minutes until the vegetables are tender.
  5. Toss the cooked ravioli into the skillet with the vegetables and mix well.
  6. Serve hot, topped with grated Parmesan cheese and fresh basil leaves.

Notes

Use fresh, seasonal ingredients for the best flavor. Can substitute with frozen ravioli.
