A delightful dish combining soft ravioli with fresh vegetables, perfect for a quick weeknight dinner.
Ingredients
- 1 package of ravioli
- 2 cups cherry tomatoes, halved
- 1 cup asparagus, trimmed and cut into pieces
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt & pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh basil leaves (for garnish)
Instructions
- Cook the ravioli according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat.
- Add the garlic and sauté for 1 minute until fragrant.
- Add the cherry tomatoes and asparagus, season with salt and pepper, and cook for about 5-7 minutes until the vegetables are tender.
- Toss the cooked ravioli into the skillet with the vegetables and mix well.
- Serve hot, topped with grated Parmesan cheese and fresh basil leaves.
Notes
Use fresh, seasonal ingredients for the best flavor. Can substitute with frozen ravioli.
