A flavorful dish featuring juicy chicken marinated in spices, garlic, and lemon, then grilled to perfection.
Ingredients
- 4 bone-in, skin-on chicken thighs (or use a whole chicken cut into pieces)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon smoked paprika
- 1 tablespoon sweet paprika
- 1 teaspoon cayenne pepper (adjust to taste)
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- Juice of 1 lemon
- Zest of 1 lemon
- 1 tablespoon red wine vinegar
- Salt and pepper to taste
- Optional garnish: chopped parsley, lemon wedges
Instructions
- In a bowl, whisk together the olive oil, garlic, smoked paprika, sweet paprika, cayenne pepper, oregano, cumin, lemon juice, lemon zest, red wine vinegar, salt, and pepper to create the marinade.
- Place the chicken in a large resealable bag or dish. Pour the marinade over the chicken, making sure all pieces are well coated.
- Marinate for at least 120 minutes or overnight in the refrigerator.
- Preheat the grill to medium-high heat. Lightly oil the grates to prevent sticking.
- Remove the chicken from the marinade and grill it, skin-side down first, for about 6–8 minutes per side. Cook until the internal temperature reaches 165°F (74°C) and the skin is crispy.
- Let the chicken rest for 5 minutes before serving. Garnish with chopped parsley and lemon wedges if desired.
Notes
For best flavor, let the chicken marinate overnight. Feel free to customize with your favorite herbs or spices.
