Description

Make your own popping boba at home with this fun and flavorful recipe that adds a unique twist to drinks and desserts.


Ingredients

  • 1 cup fruit juice (strained, no pulp)
  • 1-2 Tbsp sugar or sweetener (optional)
  • 1/2 tsp sodium alginate
  • Optional gel food coloring or flavor extract
  • 2 cups cold water
  • 1 tsp calcium lactate or calcium chloride


Instructions

  1. Prepare the Juice Mixture: In a blender, combine 1 cup of fruit juice, optional sugar, and sprinkle in 1/2 tsp sodium alginate. Blend for 30 seconds until combined, then let sit for 15-30 minutes.
  2. Prepare the Calcium Bath: Mix 2 cups of cold water with 1 tsp calcium lactate or calcium chloride until dissolved.
  3. Drop & Spherify: Use a squeeze bottle to drop small amounts of juice mixture into the calcium bath. Watch each drop turn into a sphere.
  4. Let Them Set: Allow pearls to sit in the calcium bath for 30-60 seconds.
  5. Strain and Rinse: Remove pearls using a slotted spoon and rinse in cold water.
  6. Store or Serve: Use immediately in drinks or desserts, or store in light sugar syrup in the fridge for up to 24-48 hours.
