Description
Pizza Enchiladas combine the flavors of pizza and enchiladas into a fun and delicious dish perfect for family dinners or gatherings.
Ingredients
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 1 cup pepperoni slices
- 2 cups shredded cheese (mozzarella or a blend)
- 8 flour tortillas
- 2 cups pizza sauce
- 1 tsp garlic powder
- 1 tsp oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Drain excess fat.
- Stir in pepperoni, garlic powder, oregano, salt, and pepper. Cook for another 2-3 minutes.
- Lay out a tortilla and fill it with the beef mixture and a sprinkle of cheese. Roll it up and place it seam-side down in a baking dish.
- Repeat for all tortillas.
- Pour pizza sauce over the top of the rolled enchiladas and sprinkle with remaining cheese.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for an additional 10 minutes or until cheese is bubbly.
- Serve hot and enjoy!
Notes
Feel free to customize with your favorite pizza toppings. For a vegetarian version, replace meat with vegetables and black beans.
