Description

Pizza Enchiladas combine the flavors of pizza and enchiladas into a fun and delicious dish perfect for family dinners or gatherings.


Ingredients

  • 1 lb lean ground beef
  • 1 cup diced yellow onion
  • 1 cup pepperoni slices
  • 2 cups shredded cheese (mozzarella or a blend)
  • 8 flour tortillas
  • 2 cups pizza sauce
  • 1 tsp garlic powder
  • 1 tsp oregano
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground beef and diced onion until the beef is browned. Drain excess fat.
  3. Stir in pepperoni, garlic powder, oregano, salt, and pepper. Cook for another 2-3 minutes.
  4. Lay out a tortilla and fill it with the beef mixture and a sprinkle of cheese. Roll it up and place it seam-side down in a baking dish.
  5. Repeat for all tortillas.
  6. Pour pizza sauce over the top of the rolled enchiladas and sprinkle with remaining cheese.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake for an additional 10 minutes or until cheese is bubbly.
  9. Serve hot and enjoy!

Notes

Feel free to customize with your favorite pizza toppings. For a vegetarian version, replace meat with vegetables and black beans.
