Description
Delightful sugar cookies topped with juicy pineapple rings and a hint of caramelization.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 10–12 canned pineapple rings, well-drained and patted dry
- Additional sugar for sprinkling
Instructions
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
- Roll the dough into balls, about 1 1/2 tablespoons each, and slightly flatten them. Place the cookies on the lined baking sheets, leaving space between each cookie.
- Top each cookie with a pineapple ring, gently pressing it down into the dough.
- Sprinkle a little additional sugar on top of each pineapple ring for extra sparkle and delicious caramelization.
- Bake in the preheated oven for 12–14 minutes or until the edges turn golden and the cookies are set.
- Allow the cookies to cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
For crispier edges, bake for an extra 1–2 minutes. Store cookies in an airtight container for up to 4 days.
