Pineapple Upside Down Sugar Cookies

Description

Delightful sugar cookies topped with juicy pineapple rings and a hint of caramelization.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1012 canned pineapple rings, well-drained and patted dry
  • Additional sugar for sprinkling


Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until a soft dough forms.
  5. Roll the dough into balls, about 1 1/2 tablespoons each, and slightly flatten them. Place the cookies on the lined baking sheets, leaving space between each cookie.
  6. Top each cookie with a pineapple ring, gently pressing it down into the dough.
  7. Sprinkle a little additional sugar on top of each pineapple ring for extra sparkle and delicious caramelization.
  8. Bake in the preheated oven for 12–14 minutes or until the edges turn golden and the cookies are set.
  9. Allow the cookies to cool on the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

For crispier edges, bake for an extra 1–2 minutes. Store cookies in an airtight container for up to 4 days.
