Description

A refreshing and vibrant drink that combines the tropical sweetness of pineapple with the aromatic flavors of lemongrass, perfect for hot summer days.


Ingredients

  • 2 cups water
  • 1 tablespoon dried lemongrass or 1 stalk fresh lemongrass, sliced
  • 1 cup fresh or frozen pineapple chunks
  • 12 teaspoons honey or sugar (optional, to taste)
  • 1 cup cold water or ice cubes (for cooling the drink)
  • More ice cubes (for serving)
  • Fresh pineapple slice (for garnish, optional)
  • Fresh lemongrass stalk or a mint sprig (for garnish, optional)


Instructions

  1. In a small saucepan, bring 2 cups of water to a boil. Add the lemongrass and pineapple chunks. Reduce heat and simmer for 5–7 minutes to extract flavor.
  2. Remove from heat and strain the mixture into a heatproof pitcher or bowl. Stir in honey or sugar while still warm if using.
  3. Add 1 cup of cold water or let the mixture cool, then pour over ice to chill quickly. Refrigerate until fully cold if making ahead.
  4. Pour into glasses filled with ice and garnish with a fresh pineapple slice and lemongrass or a mint sprig for an aromatic finish. Enjoy!

Notes

For a stronger lemongrass flavor, allow the tea to steep longer during the simmering process. Store leftovers in an airtight container in the refrigerator for up to 3 days.
