Description
A refreshing and vibrant drink that combines the tropical sweetness of pineapple with the aromatic flavors of lemongrass, perfect for hot summer days.
Ingredients
- 2 cups water
- 1 tablespoon dried lemongrass or 1 stalk fresh lemongrass, sliced
- 1 cup fresh or frozen pineapple chunks
- 1–2 teaspoons honey or sugar (optional, to taste)
- 1 cup cold water or ice cubes (for cooling the drink)
- More ice cubes (for serving)
- Fresh pineapple slice (for garnish, optional)
- Fresh lemongrass stalk or a mint sprig (for garnish, optional)
Instructions
- In a small saucepan, bring 2 cups of water to a boil. Add the lemongrass and pineapple chunks. Reduce heat and simmer for 5–7 minutes to extract flavor.
- Remove from heat and strain the mixture into a heatproof pitcher or bowl. Stir in honey or sugar while still warm if using.
- Add 1 cup of cold water or let the mixture cool, then pour over ice to chill quickly. Refrigerate until fully cold if making ahead.
- Pour into glasses filled with ice and garnish with a fresh pineapple slice and lemongrass or a mint sprig for an aromatic finish. Enjoy!
Notes
For a stronger lemongrass flavor, allow the tea to steep longer during the simmering process. Store leftovers in an airtight container in the refrigerator for up to 3 days.
