A sweet and moist cake featuring fresh pineapple juice, perfect for any occasion.
Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup fresh pineapple juice
- 1/3 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- Zest of 1 lime (optional)
- For the glaze (optional):
- 1/4 cup reserved pineapple juice
- 1/2 cup powdered sugar
- 1 tablespoon lime juice
Instructions
- Preheat your oven to 350°F (175°C). Grease and line an 8×8 inch or 9-inch round cake pan with parchment paper.
- In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate large bowl, whisk together the pineapple juice, vegetable oil, eggs, vanilla extract, and lime zest (if using).
- Gradually fold the dry ingredients into the wet ingredients in three additions, stirring gently each time until just combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, whisk together the pineapple juice, powdered sugar, and lime juice until smooth. Drizzle over the cooled cake and let it set before slicing.
Notes
Serve it with vanilla ice cream or whipped cream for an extra treat. Store leftovers in an airtight container at room temperature for up to three days.
