Description

Delicious and chewy peanut butter cookies with three variations: Chocolate, Three Ingredient, and No Bake.


Ingredients

  • Chocolate Peanut Butter Cookies:
    • 2 1/4 cups flour
    • 2/3 cup cocoa powder
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 1/2 cups sugar, divided
    • 1 cup butter, softened
    • 1 cup creamy peanut butter
    • 1 1/4 cups light brown sugar, packed
    • 2 eggs
    • 1 teaspoon vanilla extract
  • Three Ingredient Peanut Butter Cookies:
    • 1 cup creamy peanut butter
    • 1 cup light brown sugar, packed
    • 1 large egg
  • No Bake Peanut Butter Cookies:
    • 3 cups quick-cook oats
    • 1/4 teaspoon salt
    • 1/2 cup butter
    • 2 cups sugar
    • 1/2 cup milk
    • 1 cup peanut butter
    • 2 teaspoons vanilla


Instructions

  1. For Chocolate Peanut Butter Cookies: Preheat your oven to 350°F (175°C). In a bowl, mix the flour, cocoa powder, baking powder, and baking soda, and set aside. In another bowl, cream together the butter, peanut butter, and sugars until smooth. Beat in the eggs and vanilla extract. Gradually add the flour mixture to the butter mixture. Shape the dough into balls and roll them in sugar. Place on a baking sheet and bake for 10-12 minutes.
  2. For Three Ingredient Peanut Butter Cookies: Preheat your oven to 350°F (175°C). Mix the peanut butter, sugar, and egg together until well combined. Drop spoonfuls of dough onto a baking sheet. Flatten each cookie with a fork. Bake for 10 minutes.
  3. For No Bake Peanut Butter Cookies: In a pan, combine oats, salt, butter, sugar, and milk. Bring the mixture to a boil for 1 minute. Remove from heat and stir in the peanut butter and vanilla until smooth. Drop spoonfuls onto wax paper and allow to cool until set.

Notes

Store cookies in an airtight container for up to a week, or freeze for up to three months. You can add nuts or chocolate chips for extra texture.
