Delightful fusion of peach cobbler and cheesecake wrapped in crispy egg rolls, perfect for dessert lovers.
Ingredients
- 2 cups fresh or canned peaches, diced
- 1 tbsp butter
- 1 tbsp brown sugar
- 1 tsp cinnamon
- 1 tsp vanilla
- 1 tbsp cornstarch (if needed)
- 1 tbsp water (for cornstarch)
- 8 oz soft cream cheese
- 1/2 cup powdered sugar
- 1 tsp vanilla
- 10 egg roll wrappers
- Oil for frying
- Cinnamon sugar mix
Instructions
- Cook the diced peaches in a pan with butter, brown sugar, cinnamon, and vanilla until soft and saucy. If too runny, mix cornstarch with water and add to peaches to thicken. Allow to cool.
- In a bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
- Spread a layer of cheesecake filling on an egg roll wrapper, followed by a layer of peach filling. Fold the wrapper up, tuck in the sides, and roll tightly. Seal with a little water.
- Heat oil in a deep pan to 350°F. Fry egg rolls in batches until golden brown, about 2-3 minutes on each side.
- Roll warm egg rolls in cinnamon sugar mix and serve with ice cream if desired.
Notes
For best results, ensure your oil is hot enough for frying. You can also experiment with different fruits or add nuts for variety.
