Oven Fried Potatoes & Onions

Description

A delicious and simple side dish that pairs well with many meals, featuring crispy potatoes and tender onions.


Ingredients

  • 2 pounds potatoes, sliced into 1/2-inch-thick pieces
  • 1 onion, halved and cut into quarters
  • 1/2 cup canola oil
  • 1/2 cup olive oil
  • 4 cloves garlic, chopped
  • 1 envelope onion soup mix
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon freshly ground black pepper


Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Combine the sliced potatoes and onion in a roasting pan; cover them with canola oil and olive oil.
  3. Add the chopped garlic, onion soup mix, rosemary, and black pepper. Stir until the potatoes and onions are evenly coated.
  4. Cover the roasting pan with aluminum foil.
  5. Roast in the preheated oven for 25 minutes.
  6. Remove the foil and continue to roast until the potatoes and onions are browned and crispy, 15 to 30 minutes.

Notes

For extra crunch, increase the roasting time slightly but watch to prevent burning. You can also add other vegetables for extra flavor.
