A delicious and filling one-pot meal that combines tender chicken, savory sausage, and comforting pasta in a creamy cheddar and ranch sauce.
Ingredients
- 1 lb chicken breast, diced
- 1 lb smoked sausage, sliced
- 12 oz penne or rotini pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 packet ranch seasoning mix
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until softened.
- Add the diced chicken and sliced sausage, cooking until the chicken is no longer pink.
- Stir in the ranch seasoning mix, chicken broth, and pasta.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover the pot.
- Cook for about 10-12 minutes or until the pasta is tender.
- Stir in the heavy cream and shredded cheddar cheese, mixing until the cheese has melted and the sauce is creamy.
- Season with salt and pepper to taste, and serve hot.
Notes
For added flavor, sauté some bell peppers or spinach with the onion and garlic. For heat, add red pepper flakes or jalapeños.
