Ingredients
- 1 tbsp olive oil
- 14 oz smoked sausage, sliced
- 8 oz pasta (e.g., penne or rotini)
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
- Add the chopped onion and minced garlic, cooking until softened.
- Stir in the pasta, chicken broth, and heavy cream. Bring to a boil, then reduce heat and cover.
- Cook for 10-12 minutes until pasta is tender, stirring occasionally.
- Remove from heat and stir in the cheddar cheese until melted. Season with salt and pepper.
- Garnish with chopped parsley before serving.
