Ingredients

  • 1 tbsp olive oil
  • 14 oz smoked sausage, sliced
  • 8 oz pasta (e.g., penne or rotini)
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Chopped parsley for garnish


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the sliced smoked sausage and cook until browned.
  2. Add the chopped onion and minced garlic, cooking until softened.
  3. Stir in the pasta, chicken broth, and heavy cream. Bring to a boil, then reduce heat and cover.
  4. Cook for 10-12 minutes until pasta is tender, stirring occasionally.
  5. Remove from heat and stir in the cheddar cheese until melted. Season with salt and pepper.
