Description
A quick and delicious one-pot meal combining succulent shrimp and tender orzo pasta in a garlic butter sauce.
Ingredients
- 1 pound large shrimp, peeled and deveined
- 1 cup orzo pasta
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1/2 cup fresh parsley, chopped
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Juice of 1 lemon
- Grated Parmesan cheese for serving
Instructions
- Melt the butter in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp and cook until pink, about 3-4 minutes.
- Stir in the orzo and mix well.
- Pour in the chicken broth and bring to a boil.
- Reduce heat to a simmer, cover, and cook for about 10-12 minutes or until the orzo is tender and has absorbed most of the liquid.
- Stir in the cherry tomatoes, parsley, lemon juice, and red pepper flakes.
- Season with salt and pepper to taste.
- Serve with grated Parmesan cheese on top.
Notes
Add extra lemon wedges for a fresh squeeze and sprinkle additional parsley or Parmesan cheese for garnish.
