One Pot Garlic Butter Shrimp and Orzo

Description

A quick and delicious one-pot meal combining succulent shrimp and tender orzo pasta in a garlic butter sauce.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh parsley, chopped
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Grated Parmesan cheese for serving


Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp and cook until pink, about 3-4 minutes.
  4. Stir in the orzo and mix well.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat to a simmer, cover, and cook for about 10-12 minutes or until the orzo is tender and has absorbed most of the liquid.
  7. Stir in the cherry tomatoes, parsley, lemon juice, and red pepper flakes.
  8. Season with salt and pepper to taste.
  9. Serve with grated Parmesan cheese on top.

Notes

Add extra lemon wedges for a fresh squeeze and sprinkle additional parsley or Parmesan cheese for garnish.
