Oatmeal, Apple, and Carrot Muffins

Description

A delicious and healthy snack combining oats, apples, and carrots, perfect for breakfast or tea time.


Ingredients

  • 2 cups rolled oats, chopped in a blender
  • 1 teaspoon baking powder
  • 1 cup milk of your choice
  • 1 carrot, grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 4 tablespoons raisins, rinsed with hot water
  • 1 apple, grated


Instructions

  1. Preheat the oven to 350°F (180°C) and grease a muffin tin.
  2. In a large bowl, mix the chopped oats and baking powder together.
  3. Add the milk and stir until well combined.
  4. Fold in the grated carrot, chopped apricots, raisins, and grated apple.
  5. Scoop the mixture into the muffin tin, filling each cup to the top.
  6. Bake for 20-25 minutes, or until the tops are golden brown.
  7. Allow the muffins to cool before removing them from the tin.

Notes

Sprinkle some cinnamon or nutmeg on top before baking for extra flavor. Store in an airtight container for up to 3 days or freeze for future use.
