A delicious and hearty casserole that combines the classic flavors of Moo Shu Chicken, perfect for family dinners.
Ingredients
- 2 tablespoons vegetable oil
- 1 pound chicken breast filets, cut into thin strips
- 2 eggs, lightly beaten
- 1 cup baby Bella or shiitake mushrooms, thinly sliced
- 3 cups shredded cabbage or coleslaw mix
- 1/2 cup shredded carrots
- 2 teaspoons minced garlic
- 2 teaspoons grated fresh ginger
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat the vegetable oil over medium heat. Add the chicken and cook until browned.
- Stir in the mushrooms, cabbage, carrots, garlic, and ginger, and cook for another 5-7 minutes until the veggies are tender.
- In a separate bowl, combine the beaten eggs with the chicken and vegetable mixture.
- Transfer everything to a greased casserole dish.
- Bake for about 25-30 minutes, or until the top is golden and the eggs are fully set.
- Serve hot and enjoy!
