Description

A delicious and hearty casserole that combines the classic flavors of Moo Shu Chicken, perfect for family dinners.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken breast filets, cut into thin strips
  • 2 eggs, lightly beaten
  • 1 cup baby Bella or shiitake mushrooms, thinly sliced
  • 3 cups shredded cabbage or coleslaw mix
  • 1/2 cup shredded carrots
  • 2 teaspoons minced garlic
  • 2 teaspoons grated fresh ginger


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chicken and cook until browned.
  3. Stir in the mushrooms, cabbage, carrots, garlic, and ginger, and cook for another 5-7 minutes until the veggies are tender.
  4. In a separate bowl, combine the beaten eggs with the chicken and vegetable mixture.
  5. Transfer everything to a greased casserole dish.
  6. Bake for about 25-30 minutes, or until the top is golden and the eggs are fully set.
  7. Serve hot and enjoy!
