Description

Ingredients

  • 1 cup of glutinous rice flour (mochiko)
  • 1/4 cup of sugar
  • 1 cup of water
  • Cornstarch (for dusting)
  • Fillings of your choice (sweet red bean paste, ice cream, or fruit)


Instructions

  1. In a microwave-safe bowl, mix the glutinous rice flour and sugar together.
  2. Add the water and stir until well combined.
  3. Cover the bowl with plastic wrap and microwave for 1 minute. Remove and stir.
  4. Microwave for another minute, then stir again. Repeat this step one more time (for a total of 3 minutes).
  5. Your mochi should be soft and sticky. Dust a clean surface with cornstarch and turn the mochi out onto it.
  6. Let the mochi cool slightly, then dust your hands with cornstarch and pinch off small pieces.
  7. Flatten each piece and add your desired filling. Fold the edges over to seal the filling inside.
  8. Roll the mochi in cornstarch to prevent it from sticking and enjoy!

Notes

Best enjoyed fresh, but can be stored in an airtight container for up to two days. For longer storage, freeze the pieces and thaw before enjoying.
