Ingredients
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon peppermint extract
- 1/2 cup mini chocolate chips
- 1/2 cup additional powdered sugar for coating
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and powdered sugar until smooth.
- Add flour, salt, and peppermint extract, mixing until well combined.
- Gently fold in the mini chocolate chips.
- Form the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool slightly, then roll the warm cookies in powdered sugar.
- Allow to cool completely before enjoying.
