Ingredients

  • 2 cups pinto beans
  • 1 onion, quartered
  • 2 cloves garlic, minced
  • 6 cups water
  • 1 teaspoon salt
  • 1 bay leaf
  • Optional: 1-2 jalapeños for heat


Instructions

  1. Rinse the pinto beans and soak them in water for at least 4 hours, or overnight.
  2. In a large pot, combine the soaked beans, onion, garlic, water, salt, and bay leaf. If using, add jalapeños for heat.
  3. Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 90 to 120 minutes, or until beans are tender.
