- 1 onion, quartered
- 2 cloves garlic, minced
- 6 cups water
- 1 teaspoon salt
- 1 bay leaf

Instructions
- Rinse the pinto beans and soak them in water for at least 4 hours, or overnight.
- In a large pot, combine the soaked beans, onion, garlic, water, salt, and bay leaf. If using, add jalapeños for heat.
- Bring to a boil over high heat, then reduce to a simmer. Cover and cook for about 90 to 120 minutes, or until beans are tender.
